做法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放(fàng )入(rù )生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住(zhù )春笋,盖上锅盖大(dà )火煮开后转中火。煮到水快熬(áo )干(gàn )的时候加入盐(yán ),翻(fān )炒均(jun1 )匀(yún )稍收汁时盖上锅盖焖。
