做法:春笋切成片(piàn )后加(jiā )少许(xǔ )盐捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油,放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒(chǎo )1分钟左右。再(zài )加入生抽、老抽(chōu )、蚝油(yóu )翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上(shàng )锅(guō )盖(gài )大(dà )火煮开后转中火。煮(zhǔ )到水快(kuài )熬干的时候加入盐,翻炒(chǎo )均匀稍收汁时盖(gài )上锅盖焖。
