做法:春笋(sǔn )切成片后加(jiā )少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅(guō )烧热,倒入2勺油,放入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开后(hòu )转中火。煮到水快熬干的时候(hòu )加(jiā )入盐,翻炒(chǎo )均匀稍收(shōu )汁时(shí )盖上(shàng )锅盖焖。
