做法:春笋切成片后加少许(xǔ )盐捞出(chū )后用清水浸泡,生姜切片,葱(cōng )切成(chéng )段。锅烧热(rè ),倒入2勺(sháo )油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟左右。再加(jiā )入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春(chūn )笋,盖上锅(guō )盖大(dà )火煮开(kāi )后(hòu )转中火。煮到水快熬干的时候加入盐(yán ),翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
