做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出后用(yòng )清(qīng )水浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒(dǎo )入(rù )2勺油,放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟(zhōng )左(zuǒ )右。再加入生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水半掩住春笋,盖上锅盖大火煮开后(hòu )转中火。煮到水快熬(áo )干的时候(hòu )加入盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖(mèn )。
