做(zuò )法:春笋切(qiē )成片后加少许盐(yán )捞出后用(yòng )清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再(zài )加入生抽(chōu )、老(lǎo )抽、蚝油翻(fān )炒(chǎo )均匀,加入少量(liàng )清水(shuǐ )半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均(jun1 )匀稍收(shōu )汁时盖上锅(guō )盖焖。
